Banana bread

It’s the same old story… one day, you bought a bunch of bananas, but then you fail to eat them in time, and they slowly turn brown. So, time to shed some tears and through them away? No, our American readers will already have guessed what we are going to do, we are going to bake a banana bread instead. This one is a little special though, since it hides a whole banana in its core. Yummy!

Ingredients

  • 250 gr self-raising flour
  • 1/4 of a nutmeg
  • 1 tsp cinnamon
  • 125 gr butter
  • 125 gr caster sugar
  • lemon zest
  • 2 eggs
  • 3 bananas, mashed with a fork
  • handful of sultanas
  • 3 tbsp honey
  • 1 whole firm banana (optional)

Preheat oven to 180°C.

Sieve the flour, grounded nutmeg and cinnamon into a bowl, and rub in the butter. Using a wooden spoon, fold in the sugar, eggs, lemon zest, sultanas, mashed bananas and honey.

Pour half of the mixture in the tin, drop in the whole firm banana and add the rest of the mixture.

Bake for 1¼ to 1½ hours or until a skewer pushed into the cake comes out clean (avoid pushing into the whole banana!).

Leave to cool in the tin for ten minutes before turning out onto a rack to cool. Slice, spread with butter, and enjoy.
