Asparagus with sauce hollandaise

A friend of mine used to work for the German Chamber of Commerce somewhere in the world, far away from home. In spring, he was charged to organise the chamber’s annual asparagus dinner, which included the direct import of white asparagus from Germany. Unbelievable? No, because Germans are simply crazy about asparagus!

Well, even I cannot elude the phenomenon either. Even after having spent years abroad, which has marked me in so many ways, I realise every spring how damn much I am still German. The sight of white asparagus just makes my heart jump. Who would have guessed that?

Maybe my … Continue Reading

Spanakopita with apricots

This recipe came from my dear aunt. Although she calls it a strudel, she isn’t German. But that’s the beauty of cosmocooking. To dare to use ingredients from different countries and find nice combinations. So we mixed ricotta with feta, Parmesan cheese and dried apricots. This time the list of ingredients is a bit longer than usual. As you have to fold the mixture into small packages, she calls it a strudel, but we rather prefer to call it secretly Spanakopita.

Ingredients

  • 3 shallots
  • 100 g dried apricots
  • 1 lemon
  • 50 g pine nuts
  • 6 tbsp olive oil
  • 300 g frozen spinach
  • 1 egg
  • 100 gr feta
  • 200 gr ricotta
  • 50

When my friend started backing this pie, in fact he started with la haute cuisine expérimentale. Though he abandoned now the experimental adding of tuna to random recipes, you might find that this recipe is one of those classic recipes, of which the simplicity is its strength. I can almost refer to the Minimalist who is the expert in making beautiful things with a minimal amount of … Continue Reading

Banana bread

It’s the same old story… one day, you bought a bunch of bananas, but then you fail to eat them in time, and they slowly turn brown. So, time to shed some tears and through them away? No, our American readers will already have guessed what we are going to do, we are going to bake a banana bread instead. This one is a little special though, since it hides a whole banana in its core. Yummy!

Power food for sailing

The vegetarian lentil tart/quiche

There we went for a weekend of sailing to the Netherlands. Up to Aalsmeer, which is not only known for the lake for sailing but also worldwide famous for the international flower market. On board of the polyvalk we wanted to go faster than the wind, but unfortunately the wind was not really present that weekend. Nevertheless, a very sunny weekend of being busy on the water requires energy and so a vegetarian quiche/tart was created. All the way … Continue Reading
